The Chinese Chestnut has become the favored Chestnut to be planted in orchards and further developed into a commercial crop. This is largely due to blight resistance which is not found commonly in American or European Chestnuts.
Nuts can vary widely in size and flavor; and that helps to guide their use. Large Chestnuts are often less flavorful and better used for making Chestnut flour; a great gluten-free flour. Smaller Chestnuts tend to be more tender and sweeter in flavor; making them great for fresh eating.
