Yellowbud Hickory (Carya cordiformis), otherwise known as Bitternut Hickory, is an up and coming tree crop. The nuts are crushed, in-shell, to obtain their high quality oil.
The oil is delicious and healthy, tasting like nutty olive oil. The oil is high in unsaturated fats, and it has a high smoke point of around 450°F.
